Asian Chicken Salad with a
Red Pepper Soy Dressing
Now I know that the Jefferson dining hall has an "Asian Wok" station, but let's be serious... That is not authentic Asian cuisine, and the amount of oil they use is atrocious. Not to mention that the fried rice/noodle creations are only available during dinnertime. Well I am going to do something crazy. I am going to show you how you have have a delicious and healthy pseudo-asian dish that you can eat for any meal! All the ingredients for this salad have been hiding out at the salad bar just waiting for you to find them!
What you need:
(From the main food line)
Steamed rice
Stir fried vegetables
(From the Salad Bar)
A big ol' pile of lettuce/spinich
A few pieces of chicken
2 T broccoli
1 T carrots
1 T radishes
1 T mushrooms
1 T crunchy rice noodles
1 T oranges ( mandarin if available!)
The Dressing-
2 T soy sauce
1 T red wine vinegar
1 T olive oil
1/4 tsp spicy brown mustard
1/4 tsp bbq sauce
1/2 tsp honey
1/4 tsp red pepper flakes ( for that little kick!)
1. Start out in the regular line to get a little bit of steamed rice and stir fried vegetables
2. Then mosey on over to the salad bar to pick up your greens, chicken, carrots, radishes, mushrooms, oranges, and crispy rice noodles.
3. Then get a bowl to mix you dressing. Put your soy sauce, vinegar, olive oil, spicy mustard, bbq, honey, and red pepper flakes in the bowl and mixy mixy...
4. KEY STEP: Soak your pieces of chicken in your dressing and pout the rest over your salad! Enjoy!
