There are few things in this world that are as wonderful as brunch! I would like to hug whoever thought of combining the comfort of breakfast and the versatility of lunch into one marvelous meal. Brunch allows you to enjoy treats like pancakes along side your salad and sandwich. Not to mention it is totally acceptable to eat enough to fill two meals in one brunch sitting. Brunch makes me so happy, that I could celebrate! With that said, I hope you join me in my Brunch Fiesta by trying out my Loco Buenos Huevos Rancheros! ( translation : Crazy good Eggs)

What you need:

1 egg

1 whole grain piece of toast

1 T beans

1 T tomatoes

1 T cubed ham

All the fixins'.. Add to your liking!

jalapenos

red onion

green pepper

banana pepper

green onion

Feta cheese

cheddar cheese

sour cream

salsa

guacamole

hot sauce

1. Toast your bread and place your egg on top of toast.

2. Then pole on beans, tomatoes, and cubed ham.

3. Stack that lil' nino with all the fixins'

4. Celebrate your brunch fiesta
